Cocktail of the Week: Up&Up Resting Fierceness

  • 1 oz Pernod Absinthe
  • .5 oz mezcal
  • .25 oz Luxardo Maraschino
  • 4 maraschino cherries
  • mint sprigs

To create this cocktail of the week, muddle mint, cherries and Luxardo Maraschino in a small tin. Add the Pernod Absinthe, mezcal and ice. Stir until the ice is almost dissolved, then pour into a chilled double rocks glass. Top with ice, add a metal straw and a ring of Peychaud’s Bitters. Garnish with a sprig of mint.

For its traditional green color, absinthe has been infamously referred to throughout history as “the green fairy.” So where better to enjoy the anise-flavored spirit than in Manhattan’s Greenwich Village? At the New York craft cocktail bar The Up & Up, the Resting Fierceness adds an exciting mezcal twist to the traditional absinthe cocktail with a cherry-infused sweetness. Perfect for slow sipping in this intimate setting.

“I wanted to do a real absinthe cocktail, where absinthe was the base spirit, not just a mist or rinse,” said Matt Piacentini, owner and general manager of The Up & Up, in speaking to Elite Traveler. “That said, I did not want to go in the direction of a sour or something with champagne. I started with an absinthe frappe, and made it like a mint julep. Then I added Luxardo Maraschino…and finally settled on mezcal to give it this totally different low frequency. I then added muddled maraschino cherries in with the mint to round out the sweetness. As is a through line in many of my drinks, you’ve got two very different flavors dancing, and it’s in the place where they meet that most of the experience of the cocktail happens.”
