Style/Ambiance: Part of the new five-star Waldorf Astoria hotel in Grade I-listed Syon Park, The Capability offers rustic, seasonal fare close to Heathrow Airport.

Chef Thrift takes pride in UK produce, and grows his own fruit, vegetables and herbs in the park grounds. Expect treats like Dorset snails with black pudding, wild boar bacon and garlic butter, Pan Haggarty with woodland mushrooms and traditional game like buck rabbit and Scotch woodcock. Sommelier Romain Columbi keeps a fine cellar of Old and New World wines, with tastings available at the Chef’s Table in the hotel greenhouse.
