With each recipe telling a story of innovation and change, Metamorfosi is a culinary experience not to be missed.

By Elite Traveler

Located within Rome’s Parioli district, this one-Michelin starred restaurant is classic yet contemporary in design, with a distinct culinary identity that balances tradition and experimentation. The modern, minimalistic décor and friendly service give Metamorfosi a relaxed dining atmosphere, which is something the restaurant prides itself on.

While embracing seasonality, the owner/chef Roy Salomon Caceres creates fusion Italian dishes that take influence from South America, particularly his homeland of Colombia. Signature dishes at Metamorfosi include lamb tartare with oyster emulsion and spicy capsicum powder and fregula, plankton, warty-venus clams and caviar. An absolute must, however, is Caceres’s world-famous Carbonara egg 65°, a deconstructed version of Rome’s classic pasta dish.
