Culinary excellence rears its head at Wynn Las Vegas once again with the appointment of Joseph Elevado to executive chef of Andrea’s, the new restaurant opening December 28 at Encore. In ownership of a culinary resume featuring gastronomic enthusiast-honored kitchens across the country, Chef Elevado brings his mastery of Asian flavors and technical artistry to Andrea’s chic, modern dining atmosphere integrated into Surrender Nightclub. Elevado debuts creative sharable plates and menu items that are ideal for lively group dining in a setting that is distinctively Wynn.
“I am creating dishes that will complement Andrea’s fun, high-energy and interactive dining experience,” said Chef Elevado. “I envision people eating much like I do when I go out with friends, sharing together family style. Dishes like crispy crab and scallop, truffled ponzu rock shrimp tempura, and, of course, Wagyu sliders are perfect to share. My goal is to make everyone’s meal at Andrea’s as exciting and memorable as their night out at Surrender Nightclub.”
Boasting an array of fresh shellfish on ice, diners may opt to enjoy a wide range of dim sum pot stickers, dumplings, rolls and scallion pancakes that can be paired with colorful salads, noodles, fried rice variations and other tempting side dishes. Elevado’s menu features something for every taste, including classically prepared steaks, seafood, poultry and vegan options.

Elevado’s return to Las Vegas has been long awaited after serving as Executive Chef at L’Ermitage Beverly Hills. Previously, he was at the tiller of the kitchen at Social House in Las Vegas. Elevado also enjoyed a nine-year stint at Nobu, first at Nobu NYC under Chef Nobu Matsuhisa and then later as Executive Chef at Nobu Las Vegas, where he earned numerous accolades, including the Mobil Four-Star Award.
Fueled by the stylistic assertions of interior designer Todd-Avery Lenahan, Andrea’s continues Wynn’s legacy of innovation in entertainment and design. Andrea’s modern and feminine décor elements join dining and nightlife into one picture perfect sanctuary.The restaurant’s interiors are accented in cream, cognac, pearl and gold hues and feature luxurious finishes.
Eloquently accenting each meal are a series of velvet sofas and a step-up dining area illuminated by 1,000 champagne tinted Venetian glass teardrops. Wynn Las Vegas Resident DJ Steve Angello, of Swedish House Mafia fame, directs Andrea’s music program, curating sounds for early dining, mid-evening and late-evening, with volume levels always set for an unimpeded discussion.
