Le Louis XV - Alain Ducasse à l'Hôtel de Paris, located in Monte Carlo, Monaco, is the flagship restaurant of Alain Ducasse. Ducasse opened the restaurant in May 1987, accepting Prince Rainier III of Monaco's challenge to earn three Michelin stars within four years; he achieved this feat in under three years, making it the first hotel-based restaurant to reach this level. The restaurant currently holds three Michelin stars. The dining room has been renovated, restoring its original Place du Casino setting, complete with gilt decor and frescoes. Today, chef Emmanuel Pilon helms the kitchen, presenting Mediterranean haute cuisine with flair. The cuisine champions grilled fish and meats cooked over an open fire, emphasizing local Riviera produce. The tasting menu is complemented by a wine cellar containing approximately 400,000 bottles.
