Award-winning hotelier Beatrice Tollman publishes a memoir and travelogue with recipes from Red Carnation hotels worldwide.

A Life in Food, Tollman’s book, traces her career as president and founder of The Red Carnation Hotel Collection, and shares properties’ signature recipes. Favorites such as Shrimp Stroganoff, Chicken Noodle Soup and Bea’s Rice Pudding are interspersed with Tollman’s recollections of nearly 30 years in the hospitality industry. She shares memories of discovering certain dishes during her travels, and personally teaching carefully honed recipes to each chef in every property.

The Red Carnation Hotel Collection comprises 15 four- and five-star boutique properties, from South Africa’s Bushmans Kloof Reserve & Retreat to The Chesterfield Mayfair in London, UK. All proceeds from A Life in Food in the United States benefit the Safe Harbor Sanctuary and Animal Hospital.
