How to Make a Dark ‘n’ Foamy Cocktail

The expert mixologists at The Roof Garden’s Babylon Restaurant in Kensington show us how to make the Dark ‘n’ Foamy. Mixing science with tradition, this cocktail is a twist on the old ‘Dark ‘n’ Stormy’, with a sharp rum-based bottom and a sweet and spicy ginger beer foam on top.

  Ingredients: 

40ml Pampero White Rum 20ml Fresh Lime Juice 10ml Sugar Syrup 4 dashes Angostura Bitters

Instructions:

Shake the above and strain into a martini glass Top with ginger beer foam* Garnish with lime zest

1x can of old Jamaica Ginger Beer 100ml Kraken Spiced Rum Dash of Lime Juice Gelling Agents – Cellulose Powder and Xantham Gum (both vegetarian)

Mix the above inside a cream whipper and charge with two bulbs of N2.
