Cocktail of the Week: Kubu Mojito at Ayana

  • 1.5 oz rum
  • 2 tsp brown sugar
  • 4 lime wedges
  • 1.5 oz lemon juice
  • 1 oz kaffir lime leaves
  • lemongrass syrup
  • crushed ice

To create this cocktail of the week, mix all ingredients, stir and top with crushed ice. Garnish with lemongrass stick and five pieces of kaffir lime leaves.

Summer may be slipping away in other parts of the world, but on the beach in Bali it’s as vivid as ever. A twist on the standard mint cocktail, the Kubu Mojito garners its fresh summer flavor from ingredients indigenous to the region, namely aromatic kaffir limes leaves. In stark contrast to the cozy neighborhood bar featured last Friday, the open-air Kubu Beach Club at Ayana Resort & Spa serves its signature cocktail in a Balinese white sand beach cove with magnificent views of the surrounding blue water and limestone cliffs. Let the Kubu Mojito’s citrus notes keep you cool as you watch the sunset from your daybed under a traditional thatched roof.

“This drink is a perfect Balinese twist on the classic mojito,” said Manik Sudarsana, director of food and beverage at Ayana Resort & Spa, in speaking to Elite Traveler. “We use local ingredients such as lemongrass and kaffir leaves combined with traditional flavors so our guests from abroad can feel at home while on holiday. It complements the authentic dishes served at the new beach club and makes for a really refreshing cocktail experience for warm days on the beach.”

In Kubu Beach Club cabanas, guests can indulge in an authentic Kuta-style massage using natural coconut oil before retiring to their sumptuous villa for the evening. Heralded as the resort’s crown jewel, the massive three-bedroom Ayana Villa is enclosed in lush greenery with uncompromised views of the Indian Ocean. The villa features a private plunge pool, garden terrace, sunbeds, Balinese bale (pavilion) separate living area, marble bathrooms with double vanities and large soaking tubs, as well as indoor and outdoor showers.
