Mayfair is one of the glitziest parts of London, with plenty of luxury restaurants to choose from, but the latest offering from former Barrafina chef Nieves Barragan and her partner Jose Etura is one of the most exciting new openings of recent months.
The duo have pared down the pretensions of Sabor’s menu, choosing to keep it simple with a range of beautifully presented dishes including diver caught scallops and five jotas ham consome, morcilla croquetas with pine nut sauce and fresh walnuts, wild rabbit empanadilla and much more. Sabor also offers a fresh seafood counter displaying fish that can be ordered by weight.
The ground floor restaurant is inspired by the Catalonia and Basque Country. The high ceilinged room features worn timber floors, reclaimed brick walls and ironbark hardwood tables giving it the feel of a real traditional Spanish casa.
If, like us, you’re always on a quest to find a good bar Sabor has the answer. On the ground floor is a gleamingly well-designed bar, serving the best vermouth (produced by Martinez Lacuesta), wine, Spanish beers and a variety of gins in the vicinity.
The bar and kitchen have Spanish-focused interiors with bespoke modern style counters – perfect for counter dining – and Andalucian tiles straight from Southern Spain.
Leading up the spiral staircase to the first floor is the reservations only restaurant Asador – which features large sharing tables overlooking the open kitchen. There’s a traditional wood fired oven in the centre of the room, with plans for dishes such as chargrilled octopus, suckling pig and more mouth-watering options.
There’s no going wrong with three separate drinking and dining areas – each offering a unique Spanish influence and experience.
