The Restaurant
Boragó, nestled in Santiago, presents a culinary exploration of Chile's diverse terroir. Chef Rodolfo Guzmán, after training in Europe, established Boragó in 2006 as a haven for native Chilean produce. The restaurant's menu, Endémica, showcases the country's bounty, guiding diners through its various regions with creative dishes. Guzmán collaborates with over two hundred foragers and small producers to source seasonal ingredients from Chile's coastlines, mountains, and even the restaurant's own orchard. Boragó is deeply rooted in Mapuche culture, drawing inspiration from the indigenous hunter-gatherers of Southern Chile and Argentina. The restaurant has earned accolades for its sustainability efforts, emphasizing local ecosystems and responsible sourcing. Boragó was ranked number twenty-nine in The World's 50 Best Restaurants 2024.
