The Restaurant
Nuema, located in Quito, presents a contemporary and avant-garde take on Ecuadorian cuisine. Chefs Alejandro Chamorro and Pía Salazar showcase the country's biodiversity through a tasting menu that evolves with the seasons. The restaurant's name is derived from the chefs' three children: Nuria, Emilio and Martín. Nuema was the first Ecuadorian restaurant to be included on Latin America's 50 Best Restaurants list. Salazar was named The World's Best Pastry Chef in 2023. The restaurant utilizes endemic ingredients, such as nepia and mashua, crafting dishes with angular shapes, bright colors and profound flavors. Nuema offers a gastronomic experience that highlights the unique produce and identity of Ecuadorian cuisine.
