The Restaurant

Koan, situated on Copenhagen's waterfront, offers a unique dining experience where Nordic ingredients meet Korean flavors. Chef Kristian Baumann, formerly of Noma, draws upon his heritage and travels to present a tasting menu that marries traditional Korean techniques with the best of Nordic produce. The restaurant, which began as a pop-up, quickly earned two Michelin stars after opening its permanent location in April 2023. Baumann leads his team in an open kitchen, delivering creative and refined dishes. The experience is further enhanced by a carefully curated wine selection, including Korean alcohol pairings, all served within an elegant setting.
