Potong, situated in Bangkok's Chinatown, offers a progressive Thai-Chinese dining experience within a five-story building that once housed the chef's family's traditional Chinese pharmacy, operating since 1910. Chef Pichaya "Pam" Soontornyanakij, a fourth-generation descendant, blends rustic and modern decor throughout the renovated Sino-Portuguese structure, from the ground floor bar to the rooftop space. Potong has earned one Michelin star for its innovative approach to Thai-Chinese cuisine. Chef Pam, recognized as Asia's Best Female Chef in 2024, presents a tasting menu that focuses on five key elements: salt, acid, spice, texture and Maillard reaction.
