The story of L.E.S.S Eatery, formerly Bistro L.E.S.S., starts behind the scenes of Hertog Jan, which needed more space after winning a third Michelin star. In the original buildings, a new concept was born, which can best be compared to an upscale, culinary tapas bar. At that time, Bistro L.E.S.S brought a simple, yet thoughtful cuisine, with Spanish accents, canned fish, meat on the grill. Slowly, the focus shifts from Spanish to global, and the dishes became more sophisticated. During his many trips and four-hands dinners abroad, chef Gert De Mangeleer is honing his love for exotic scents and worldly flavors. The new concept at 'T Zand in Bruges combines buzzing conviviality with the vibe of a metropolis. L.E.S.S. Eatery, as the new restaurant is now called, now serves powerful flavors from the Far East and Central America, and almost always in portions you can share with the whole table.
