The Restaurant
Hiša Franko owes its existence to the traditions and local environment of the Soča Valley. The restaurant is set at the foothills of towering mountains and next to the emerald Soča River, with a cuisine that sources from what nature offers. The diet in these parts has always been dairy and meat-based, so expect a lot of cheese and by-products on the tasting menu. The restaurant is closely knit with the community of foragers, shepherds, cheese makers, hunters, and fishermen. Chef Ana Roš's strong, determined, extrovert, and contagiously friendly character is perfectly mirrored on the tasting menu, on which dishes have intensive and decisive flavors. Each course is a true discovery, in which local and Slovenian ingredients and traditions are skillfully combined with influences from elsewhere in the world with grace and the chef's own inimitable style. Hiša Franko has been awarded three Michelin stars and a green star.
