Fairmont Tremblant has just completed a $1.2 million restaurant renovation to enhance the famous resort’s destination experience and showcase the talent of its culinary team. Celebrating its spectacular alpine location with glorious views of the mountain from a brilliant fire-lit setting, the new cozy and contemporary outlets are a feast for the eyes and palate.
After four months of work, the Windigo restaurant has been entirely redesigned and now radiates a new dramatic feel from both an architectural and design standpoint, in keeping with Fairmont Tremblant’s elegant style and ambiance. The airy concept, envisioned by Arcop Group and Patricia McClintock and Associates of Montréal, includes floor to ceiling panoramic windows maximizing views of the mountain from all angles. The new décor is based on a color palette of celadon, gold, copper, burnt orange, camel and moss with accents of rich woods against a backdrop of earth-toned wall coverings and Brazilian Ipe hardwood floors. Textiles include warm chenille in geometric and floral patterns as well as soft natural colors for upholstered pieces.
With over 210º degrees of sublime vistas on Mont Tremblant and the village, it may take diners a few moments to focus on the new menu. In his restaurant, Chef Daniel Tobien blends seasonal, regional and sustainable fare with years of experience, a passion for excellence, and a determination to transform a fine meal into a true culinary adventure. He is committed to making his mark on the menus through signature dishes inspired by the bounty of the Laurentians with great respect for the pleasures of the table. Sample dishes include Homemade Foie Gras Terrine with Roasted Figs, served with a warm Brioche and Port Coulis, Laurentian Cider Jelly; Smoked Duck with Cherry Aromas, Caramelized Onions, Cranberry and Maple Liqueur Chutney or Rainbow Trout Filet from the Tremblant reserve, poached in a glass Mason jar.
A welcoming ambiance, thoughtful service and all the refinement of Fairmont Tremblant will make the new Windigo Restaurant the ideal venue for locals and visitors to the award-winning resort. Epicureans will be delighted with the meticulously selected wine list that offers a variety of international wines with a spotlight on Canadian vintages showcasing the best wines of this country. A presentation wine cellar has been added to the restaurant to give diners an overview of bottles selected by our Sommelier to pair with the tantalizing locally-inspired creations of the Executive Chef.
The newly inaugurated Nansen Lounge is located right on the Nansen run with direct ski-in, ski-out access. By far the lounge with the best view in Tremblant, it is named in honor of Kare Nansen, the Norwegian ski expert that oversaw the development of the ski resort in 1938. With its magnificent field stone fireplace as a focal point, it is the perfect place to cozy up with friends and sip a cocktail while nestled in comfortable leather couches after a day outdoors. The new cocktail menu created by Fairmont barmen in conjunction with the Fairmont Artistic Mixology Experience (FAME), directed by cocktail guru Ryan Magarian, ensures the freshest local ingredients and juices are used in all beverages such as the Signature Cocktail, the Nansen (Chambord raspberry liqueur, Sortilège Maple liqueur, Maple Syrup, fresh lemon juice and mint sprigs). Destined to become the new destination bar with high-top chairs, the best view on the resort from plush window seats, a menu with casual and comforting dishes, such as, Alsatian flambéed tart with Duck Confit and truffle oil; Mini-Burger trio of Crab & Lobster; or old-fashioned Pork Roast jelly served with croutons and garnishes.
