French Polynesia may be a midpoint between America and Southeast Asia, but a special menu at the St. Regis Bora Bora is transporting guests on the island all the way to street markets in Vietnam and food stalls of Thailand.
This fall, acclaimed chef Jean-Georges Vongerichten is heating up the hotel’s Lagoon restaurant with Asian fusion offerings from Spice Market, his beloved establishment in New York City. Like the original Manhattan masterpieces, the culinary gems on the St. Regis special menu are inspired by the chef’s travels to Southeast Asia. Paired with coriander yogurt sauce, the spiced chicken is transformed from street food to epicurean fare, and the steamed rock lobster gets an authentic upgrade with butter-fried garlic, ginger and dried chili.
For thirsty patrons, Resort Executive Chef Sebastien Le Gall has also brewed up some spicy new libations to go with the plated selections he handpicked for the special menu. For a limited time, Lychee Raspberry Bellinis, Ginger Margaritas, and Spice Market Sangrias will add a spirited kick to the tranquil ocean views from the over-water restaurant.
