The fresh tagliolini is light but firm to the bite, providing a fine bed to the lobster and salsa di Pachino, a Sicilian tomato sauce. From the south tip of Sicily to the French border in the north, the Ligurian tapenade of olives and capers brings out the flavor of the wild sea bass fillet, accompanied by crispy croccante di patate and sweet roasted peppers.
