Strawberry Queen from Scarfes Bar
- 1.5 oz Star of Bombay Gin
- 2/3 oz lime juice
- 2/3 oz Lanson Green Label Organic Champagne

4/5 oz strawberry shrub (2 lb strawberries, 7 oz sugar
3.3 oz rice wine vinegar) - pistachio foam (1/3 oz pistachio liqueur, 1/5 oz simple syrup, 1 gelatin sheet)
To create this cocktail of the week, place the strawberries and sugar in a container, mixing them every two hours for six hours. Strain mixture through a fine mesh sieve to remove the lumps and collect the syrup into a glass jar for storage, refrigerating the mixture in the
airtight container to create the strawberry shrub. Place all pistachio foam ingredients in a siphon charged with N02. Shake together Star of Bombay Gin, lime juice and strawberry shrub mixture. Strain the mixture using a fine-mesh sieve into a highball glass over cubed ice. Top with Lanson Green Label Organic Champagne as desired. Using a siphon, garnish the cocktail with pistachio foam.
This week, when we say “serve,” we don’t just mean a cocktail. Hailing from Scarfes Bar at Rosewood London, the Strawberry Queen is an homage to the upcoming Wimbledon tennis tournament which will begin Championships on July 3, 2017. Attended each year by Queen Elizabeth II, our cocktail of the week is a nod to Her Majesty and to the decadent summer treat, strawberries and cream.
“Wimbledon is one of the most iconic social events of the year in Britain and we wanted to create a special cocktail in its honor,” said Greg Almeida, head bartender at Scarfes Bar. “Wimbledon’s most famous guest of course is Her Majesty, Queen Elizabeth II, who favors a particular variety of strawberry from Kent. Inspired by Her Majesty’s favorite summer fruit, Scarfes Bar has created a twist on the classic strawberries and cream combination which is traditionally enjoyed at the tennis tournament. Using strawberries sourced from the same region of Kent as the royal berries preferred by the Queen, the Strawberry Queen cocktail is royally inspired. Reminiscent of a sweet gin fizz, this cocktail is perfect serve for sunny summer afternoons spent at Wimbledon. A cocktail the Queen would surely approve of, the Strawberry Queen is fittingly topped with the Lanson’s new Green Label Organic Champagne, the official champagne of the Wimbledon tournament. We chose a base of Star of Bombay Gin because it is a quintessentially British spirit. To create the flavors of freshly baked shortbread, we infused the gin with the pastry and then redistilled the liquid through a rotovap. The result gives a crisp and nutty flavor that pairs amazingly well with the strawberries.”
