The Restaurant
Smoked Room, a unique culinary space in Madrid's Hyatt Regency Hesperia, offers a distinctive "fire omakase" experience. Conceived by chef Dani García, this intimate restaurant, reminiscent of a speakeasy, focuses on flame-grilled haute cuisine with smoky flavors. Awarded two Michelin stars just six months after opening, Smoked Room's technique is an essential part of every dish, turning smoke into the seasoning, giving a unique flavor to each fish, vegetable, seafood, and meat dish. The aesthetically pleasing dining area has an intimate feel and features a Japanese-style bar facing the kitchen as well as just two tables. The tasting menu showcases sophisticated cuisine based on lightly smoked and charcoal-grilled dishes, featuring exquisite combinations of seasonal produce, matured fish and meats, and seaweed.
