The Restaurant
Kadeau Copenhagen offers a unique culinary journey rooted in the terroir of Bornholm, a Danish island in the Baltic Sea. Founded by childhood friends with Bornholm roots, the restaurant brings the island's essence to the capital. The restaurant currently holds two Michelin stars, awarded first in 2013 and the second in 2018, a testament to its refined and innovative approach to Nordic cuisine. The team, led by head chef Kyumin Hahn, passionately sources ingredients from Bornholm, employing techniques like drying, curing, and pickling to showcase the island's bounty throughout the seasons. The result is a complex yet skillfully crafted tasting menu that reflects the landscape and culinary traditions of Bornholm. The restaurant underwent a major refurbishment in 2016, reducing the number of seats to focus even more on each guest.
