The Restaurant
Làš Cocina y Alma, located in Jerez de la Frontera, is chef Juanlu Fernández's unique culinary universe, where Andalusian ingredients meet classic French techniques. Fernández, who describes his style as "rearguard avant-garde," personalizes the dining experience within the restaurant designed by Mexican architect Jean Porsche. The dining room offers a view into the kitchen, inviting guests to witness the creative process firsthand. Làš Cocina y Alma holds two Michelin stars, a testament to its excellent cooking. The restaurant presents tasting menus, including "Duxende," which embodies the restaurant's soul, and "El Festín," a sensory journey through the region's history and recipes. Seemingly humble dishes are elevated through stellar technique and premium ingredients. The wines and sherries of Jerez take center stage, both in pairings and on the cocktail list.
