The Restaurant
La Pergola, perched atop the Rome Cavalieri, a Waldorf Astoria Hotel, offers a dining experience as breathtaking as the panoramic views of the Eternal City it commands. Since 2005, it has been Rome's only restaurant to hold three Michelin stars, a testament to the culinary artistry of chef Heinz Beck, who has helmed the kitchen since 1994. The restaurant itself is an imaginary place, a representation of the Eternal City, a stage, a status symbol. Beck's cuisine showcases modern Italian and Mediterranean flavors, utilizing unique ingredients to create new tastes and emotions. The dining room, recently renovated, features colors and materials that pay tribute to Rome, from Travertine marble to a red color scheme. A magnificent chandelier of long crystal tubes dangles like a burst of Roman rain. La Pergola also boasts an exceptional wine list and a remarkable selection of waters.
