Dom Pérignon Dining at St. Regis Princeville

At Elite Traveler, we find that the best dining experiences involve at least a little champagne. Partnering with the prestigious house of Dom Pérignon, St. Regis Princeville is bringing the ultimate champagne dinner to Hawaii in a new private dining experience this summer.

The most exclusive offering from St. Regis Princeville, the resort’s Royal Dinner is an intimate dining experience for two. After a traditional lei presentation, private wait staff will lead you to a secluded outdoor dining area to share a private meal by candlelight. Begin with a champagne toast of Dom Pérignon 2004 before a custom seven-course menu paired with bottles of champagne. Guests will learn the art of sabering — the proper way to open a bottle of champagne — and can consult with the St. Regis Princeville Sommelier to select more vintages as they desire.

A bespoke menu ensures the tastes of each guest are met, from an amuse bouche to a first course such as salmon with yuzu kosho, green apple and radish. Additional courses can include homemade angel hair and pearls with vodka crème fraiche and caviar. Sample pairings include a bottarga paired with Dom Pérignon Luminous 2006; grilled kona lobster with wilted spinach, butter fried garlic and ginger paired with Dom Pérignon Rose Luminous, 2004; chocolate dome and dessert of choice paired with Dom Pérignon P2, 1998.

Following the dining experience, guests can bring any unfinished bottles back to their room to enjoy during their stay. We recommend sipping the rest of your champagne in the hotel’s Royal Suite. Through a private entrance, the 2,400 sq ft Royal Suite features panoramic views of Kauai’s Hanalei Bay and mountain landscapes. The suite includes a master bedroom, entertainment room with sound system, guest powder room adjacent to the living salon, fully equipped kitchen with butler entrance and wet bar. The Royal Spa features a custom-built marble surround whirlpool bathtub, expansive walk-in shower for two and dressing area. Royal Suite guests also enjoy access to the signature St. Regis Butler Service.

If you can’t leave Kauai without that rare vintage, any unopened bottles can be shipped home to enjoy at a later date. The St. Regis Princeville Resort’s Royal Dinner is priced at $8,900, including tax, gratuity and four bottles of champagne.
