The Restaurant
Located on the Forclaz Pass, L'Auberge de Montmin offers not only stunning views of the mountain pastures but also an exceptional dining experience. Chef Florian Favario, after honing his skills in renowned kitchens throughout France, opened L'Auberge de Montmin in 2019. Since then, the restaurant has earned two Michelin stars, a testament to Favario's increasingly creative cuisine rooted in the finest local produce. The tasting menu showcases lamb, piglets, home-grown vegetables, and seasonal fruits, elevated by the masterful combination of wildflowers, plants, and herbs. The resulting scents enhance dishes already at the apex of culinary technique. These detailed dishes are presented using walnut tableware designed by the chef himself, and are brought to the table by an attentive team led by Sandrine, the chef's wife.
