Located in Blois, within the five-star Relais & Châteaux hotel Fleur de Loire, Christophe Hay offers a refined dining experience that celebrates the Loire Valley's terroir. Chef Christophe Hay, a descendant of five generations of cattle farmers, showcases his deep connection to the region through creative dishes crafted with local produce, including herbs and vegetables from his permaculture garden and fish exclusively from the Loire, caught by his appointed fisherman. Housed in a grandiose 17th-century hospice overlooking the river, the restaurant earned two Michelin stars and a Green Star in a span of two years. The dining room features premium materials and Charlotte Payen drawings of nearby castles.
