The Restaurant

RAW, located in Taipei, is chef André Chiang's interpretation of Taiwanese terroir, showcasing the island's micro-seasons through innovative tasting menus. Opened in 2014, the restaurant quickly became a culinary hotspot, praised for its striking interiors featuring gigantic organic wood forms that contrast with the industrial setting. Chiang, who also received the Diners Club Lifetime Achievement Award in Asia, reinterprets Taiwanese produce and familiar flavors using modern techniques. RAW earned two Michelin stars, maintaining this distinction until its closure on December 31, 2024. The restaurant was known for its "bistronomy" style, blending fine dining with a casual setting. The tasting menu changed several times a year, reflecting Chiang's culinary journey and re-inventing Taiwanese cuisine with sleek plating and a stimulating blend of flavors. RAW has transitioned into a culinary academy, focusing on nurturing young Taiwanese culinary talent.
