The Restaurant
Saddle, occupying the former space of Madrid's legendary Jockey, revives the excellence of classic fine dining with a contemporary twist. Awarded one Michelin star, Saddle offers impeccable service and refined comfort, enhancing a superb culinary experience built upon classic recipes. The ambiance is one of spaciousness, light, and elegance, featuring several private rooms and an inner garden. Located opposite the Ministry for the Interior, Saddle pays homage to its predecessor while establishing itself as a modern classic. Since autumn 2024, the kitchen has been helmed by chef Pablo Laya, originally from Galicia. The restaurant spans two levels, offering distinct environments: a bar focused on cocktails and a grand dining room beneath a skylight that extends over the interior garden. The constant movement of trolleys adds a special touch to the dining experience.
