The Restaurant

Sushi Shikon offers a Ginza sushi experience within the Landmark Mandarin Oriental in Hong Kong. Awarded three Michelin stars consecutively from 2014 to 2024, the restaurant is overseen by executive chef Yoshiharu Kakinuma, who honed his skills with chef Masahiro Yoshitake in Tokyo. The intimate setting features an eight-seat wooden Hinoki counter, encouraging interaction with the chefs as they meticulously craft each piece. Sourcing only the finest ingredients, many flown in daily from Tokyo's Tsukiji market, Sushi Shikon presents traditional Edomae-style sushi. The head chef is known to age raw fish to develop deeper, fuller flavors, sometimes even aging them with pickled fish entrails to impart exceptional umami.
