Paco Perez represents the haute cuisine of the Mar d'Amunt. Together with wife Montse Serra, he runs what was once a restaurant with rooms that Serra's grandparents built in a small fishing town on the Costa Brava in 1939. The sea is present in body and soul of Miramar's cuisine. At this exposed location, one perceives the saline notes that the Mediterranean offers thanks to the constant sea breeze. There, where the Pyrenees Mountains sink into the sea, there is a plethora of seafood cuisine. With Andalusian roots, one can feel the echoes of those origins in Paco's cuisine.
