The Restaurant
Amber, located within The Landmark Mandarin Oriental, Hong Kong, offers a contemporary French fine-dining experience under the guidance of culinary director Richard Ekkebus. The dining room, designed by New York firm Tihany Design, provides an elegant backdrop for Ekkebus's innovative cuisine. Amber emphasizes consciously sourced ingredients, celebrating their natural flavors through refined French techniques. Following a significant refurbishment in 2019, Amber has redefined its approach, minimizing dairy and reducing refined sugars and salt to showcase the pure essence of each dish.
