Elite Traveler Speaks to Daniel Humm

Daniel HummSwiss Chef and co-owner of Eleven Madison Park, The NoMad and the NoMad Bar, Daniel Humm has earned a reputation as one of New York’s culinary masterminds. His sophisticated cuisine focuses on the locally sourced ingredients of New York and has seen him gain numerous accolades around the world.

By the age of 14, Humm had started his formal training with his first culinary apprenticeship.  Thereafter, he spent time in some of the finest Swiss Restaurants, including the three Michelin star Restaurant Pont de Brent. Humm gained his first Michelin star at the age of 24, when he was executive chef at Gasthaus zum Gupf in the Swiss Alps.

He moved to San Francisco in 2003, where he received four stars from the San Francisco Chronicle as Chef at Campton Place in San Francisco. Humm moved to New York three years later where he was titled Grand Chef Relais & Châteaux at Eleven Madison Park. In 2011 Humm and business partner Will Guidara purchased Eleven Madison Park.

Since joining Eleven Madison Park eight years ago, Humm has been awarded some of the most sought after awards in the world of haute cuisine, from three Michelin stars to outstanding four-star reviews in The New York Times.

Placing an emphasis on simplicity, purity and seasonal flavors, Humm’s intricate and defined cooking style is experienced through a constantly evolving menu, frequently modified and tailored specifically for guests. With an attentive team, business partner and Restaurantuer Will Guidara meticulously researches dishes tailored for guests to create the perfect bespoke experience.

The restaurant’s dramatically high ceilings and opulent art deco dining room add to Eleven Madison Park’s inviting and artful cuisine.
