The Restaurant
Koryu, a restaurant whose name evokes the image of a willow bending gracefully, embodies the spirit of Osaka's culinary traditions with a modern sensibility. Helmed by chef Shintaro Matsuo, Koryu has earned **two Michelin stars**, a testament to its refined approach to *kaiseki* dining. Like the willow, Matsuo remains flexible yet firmly rooted in the foundations of *Naniwa* (Osaka) *kappo*. The restaurant relocated to Kitahama in November 2021, boasting a refreshed interior with counter seating and private rooms. The sumptuously arranged sashimi, featuring a colorful array of seasonal fish, is a visual and culinary highlight. Matsuo devises ingenious touches to modulate flavors, complementing the fish. Koryu aims to honor its Osaka roots, showcasing traditional vegetables and applying a creative spirit to a solid foundation.
