The Restaurant
Located in the serene Hanase district, a ninety-minute bus ride from Kyoto, Miyamaso offers a unique culinary experience rooted in the surrounding mountains. Originally a temple lodging dating back to 1895, this establishment showcases *tsumikusa* cuisine, expressing the natural beauty of the Hanase region. Chef Hisato Nakahigashi honors the local ecosystem, incorporating hand-picked wild grasses and mountain vegetables into his tasting menu. While celebrating mountain ingredients, Miyamaso also acknowledges the historical Saba Highway, integrating seafood like tilefish and mackerel. The restaurant currently holds two Michelin stars and a Green star. The building itself is a Sukiya-zukuri masterpiece crafted by Sotoji Nakamura, featuring private rooms that offer tranquil views of the Katsura-gawa River.
