The Restaurant
Le Chantecler occupies a singular place on the French Riviera, not only for its cuisine but for the continuity it represents. Housed within the hotel Le Negresco in Nice, the dining room is a brilliant example of preserved Belle Époque interior: There are high ceilings, period paintings, and formal wood panelling. The art itself is worth a visit alone – on the walls hang a portrait of Louis XV by Rococo painter Maurice Quentic de La Tour, and Jean-Marc Nattier’s likeness of Marie Leszczynska (former Queen of France and wife of Louis XV), among others. Florals form another core element of Le Chantecler’s identity, with lavish seasonal displays created by Hervé Frézal. Rather than feeling overly theatrical, this decor sets the tone for a sophisticated fine dining experience.
Unlike the setting, however, the cuisine at Le Chantecler looks ahead, rather than to the past. Led by chef Virginie Basselot, the restaurant works within the framework of classical French gastronomy, but calls on more contemporary influences, too. Technique is precise and unapologetic, yet the flavors are clean, often restrained. Basselot calls on the finest French ingredients wherever possible – caviar from Sologne, cream from Normandy, and Toulon oysters.
Service is proudly polished and deeply knowledgeable, but never stiff; the staff understands when to guide and when to step back. The wine program, extensive and confidently curated, moves fluidly between grand houses and more undiscovered producers, with pairings that favor harmony over showmanship. Naturally, the list almost exclusively showcases French domains, bar a few exceptional exceptions. Head sommelier Jean-Gabriel Siviragol knows the wine pairing intimately, and he and his team are on hand to guide, suggest, or simply discuss a shared love of wine with fellow oenophiles.
During the summer season, Le Chantecler throws open its doors to its characterful terrace, facing the Promenade des Anglais. Head here for a sun-soaked afternoon, accented by the fine cuisine of Virginie Basselot.
