Chef Kazuya Numata surveyed tempura techniques from across Japan to master this culinary art. The tasting menu begins with *iimushi* and pureed vegetable soup, showcasing the chef's training in Japanese cuisine by artfully mixing the season's first harvest with the last. Numata achieves a light batter by folding air into the mixture. Shrimp is served in pairs, the first for its aroma, and the second lightly cooked to enhance its sweetness. Seafood alternates with vegetables in a unique serving pattern. Numata has earned two Michelin stars, a testament to its exceptional cuisine and meticulous attention to detail.
