Conceived by Paul Pairet and and opened in 2012, Ultraviolet is the first experimental restaurant of its kind, uniting food with multi-sensory technology to create a fully immersive dining experience. The three-Michelin-starred restaurant has just a single table of 10 seats and offers a 20-course "Avant-Garde" set menu. Dinner unfolds as a sensory play choreographed by Pairet and his team. Specifically equipped with multi-sensory high-end technology, the dining room is dressed up by lights, sounds, music, scents; an immersive ambience and imagination for food. Each course is enhanced with its own taste-tailored atmosphere. The restaurant aims to influence, entertain, challenge, celebrate, boost, or simply support the perception of taste.
