The Restaurant
Den, located in Tokyo, is chef Zaiyu Hasegawa's playful take on elevated Japanese home cooking. Eschewing the often impersonal traditions of high-end kaiseki cuisine, Hasegawa aims to create a deeply personal experience, drawing inspiration from both local and international influences. The restaurant's goal is to bring smiles to every guest, no matter where they are from. With two Michelin stars, Den offers a tasting menu that showcases the chef's creativity and warm hospitality. A signature salad presents over 20 vegetables prepared in various ways, sometimes featuring an edible ant or a carrot carved into a smiley face. Friendly service makes diners feel at home, contributing to the restaurant's inviting atmosphere, where the walls are adorned with autographs from appreciative visitors.
