The Restaurant
Ginza Kojyu, nestled in Tokyo's upscale Ginza district, offers an authentic kaiseki experience that celebrates the seasons. Chef Toru Okuda, a believer in *honmono*—the Japanese concept of authenticity—presents a tasting menu that showcases delicacies sourced from across the country. Ginza Kojyu earned three Michelin stars since 2008, but currently holds two Michelin stars. The restaurant accommodates just over twenty guests, fostering an intimate atmosphere divided by paper screens, with tatami mats adding to the traditional Japanese ambiance. Okuda's heartfelt respect for Japanese cuisine extends to every detail, from the presentation to the carefully selected tableware, creating a cultural experience that is both refined and deeply rooted in Japanese culinary traditions.
