Like Ravel's Bolero, the sushi here is presented with a particular rhythm, building toward a crescendo of sweetness, sourness and temperature in harmony. The restaurant currently holds three Michelin stars, a testament to Takahashi's dedication to quality and precision. Harutaka's commitment extends to sourcing the freshest seasonal ingredients daily. The tasting menu showcases traditional Edo-style techniques, with a distinctive use of white vinegar in the sushi rice, imparting a crisp and subtly sweet flavor.
