The Restaurant

Kabi, situated in Tokyo's Meguro district, offers a dining experience that subtly updates Japanese cuisine with innovative fermentation techniques. Chef Shohei Yasuda, after exploring the art of fermentation in Denmark, returned to Japan to craft his unique culinary style. Kabi opened in November 2017 and quickly garnered attention, becoming a sought-after destination for gourmets. Yasuda draws from a foundation of miso, pickles, and other fermented ingredients to compose creative tasting menu. Oils and powders extracted from various fruits and vegetables enhance both flavor and texture. Kabi was awarded one Michelin star in the 2023 Michelin Guide and maintains one Michelin star as of February 2025.
