The Restaurant
MAZ, a gastronomic project in Tokyo, is the creation of Virgilio Martínez, chef of Central in Lima, Peru, and Mater Iniciativa, a research organization. The restaurant interprets Peru's biodiversity from a vertical perspective, showcasing the country's diverse ecosystems. Helmed by chef Santiago Fernández, MAZ earned two Michelin stars in the 2025 Michelin Guide. Located in Tokyo's Kioicho district, MAZ offers a tasting menu that explores Peru's environments, from the Pacific coast to the Andes, using both Peruvian and Japanese seasonal ingredients. The intimate dining space accommodates a small number of tables, creating an atmosphere reminiscent of Central. Service is top-notch, with multilingual staff catering to an international clientele.
