The Restaurant
Sushi Kanesaka presents Edomae sushi, reflecting Japanese culture through culinary artistry. Helmed by chef Shinji Kanesaka, who honed his skills for ten years before opening his Ginza restaurant in 2000, the restaurant has earned two Michelin stars. The interior features a meticulously designed sukiya-style aesthetic, complemented by carefully selected dinnerware. Kanesaka emphasizes the seamless harmony of rice, topping, and wasabi in his nigiri, a philosophy instilled from his baseball days, where teamwork was paramount. With locations in Ginza and Aoyama, as well as international branches, Kanesaka shares the wonders of sushi globally. Note that Ginza Sushi Kanesaka requires guests to be 30 years of age or older and reservations must be made through the concierge of your hotel.
