The Restaurant
Tempura Motoyoshi, situated a short walk from Ebisu Station, offers a refined exploration of tempura. Chef Kazuhito Motoyoshi, who grew up around his parents' fish store, elevates the art of tempura to new heights, evident in his meticulous attention to detail. The restaurant has earned two Michelin stars in the 2025 guide. Motoyoshi masterfully coaxes moisture from seafood and vegetables using batter and oil, sometimes employing liquid nitrogen to achieve what some critics have called "molecular tempura." He considers every aspect, from the coating's texture to the frying temperature, to maximize the flavor of each ingredient. The restaurant's interior is designed to reflect Japan's four seasons, with seasonal floral arrangements crafted by the chef himself. The omakase tasting menu showcases seasonal ingredients, offering a delicate and artful dining experience.
