The Restaurant
Sushi Arai, located in the heart of Ginza, presents a refined sushi experience crafted by chef Yuichi Arai. Despite being one of the younger sushi chefs in Tokyo, Arai-san has cultivated his own distinctive style, earning the restaurant one Michelin star. The atmosphere is friendly and comfortable, featuring a clean, crisp interior accented with Kiso Valley hinoki wood. Chef Arai aims to ensure diners feel truly satisfied, offering slightly larger pieces than typically found. The focus is on nigiri sushi, where expertly prepared fish and shellfish are gently pressed onto a bed of delicately flavored rice made with akazu red vinegar. The chef adjusts the rice according to preference, but never compromises on the generous size of the topping. Reservations are essential to experience this celebrated Ginza establishment.
