Montage Los Cabos is starting the year with a culinary bang as it announces the launch of its latest chef residency. Kicking off next month, Mirazur Beyond Borders will see chef Mauro Colagreco, along with his team from Mirazur, take over the Mexican resort’s kitchen for 10 days of immersive gourmet experiences.
Having been awarded the coveted title of Best Restaurant in The World back in 2019, as well as receiving a third Michelin Star, the past few years have been huge for Mirazur, which sits in the French town of Menton on the Cote d’Azur.
Now, the renowned restaurant is undergoing a comprehensive kitchen renovation, giving Colagreco and his team the opportunity to not only bring their masterful cuisine to Los Cabos, but also give them the chance to absorb culinary inspiration from Mexico ahead of the restaurant reopening.

While chef Colagreco will naturally be calling upon his vast global cookery experience during his residency, it is the bountiful ingredients and rich flavors of Mexico that will be his guide. As is the Argentinian-born chef’s signature style, the degustation menus available throughout Mirazur Beyond Borders will be a product of their surroundings and a celebration of nature, with the majority of ingredients sourced locally on the Baja Peninsula.
During his time in the country, Colagreco and his team will study its historic cuisine, taking inspiration back to France ahead of Mirazur’s re-opening. “The residency at Montage Los Cabos is not only a unique and fine dining experience, it will also serve as an opportunity for myself and our team to immerse in the local culture, and better understand Mexican soil, land, and the natural environment,” he says.
Colagreco’s focus on local ingredients also furthers his, his restaurant’s and the Montage Los Cabos resort’s focus on sustainable dining. Amongst the Mirazur team will be a dedicated scientific gardener, who will not only share eco-conscious gardening expertise from the restaurant’s own garden in France but also learn new environmentally friendly skills and techniques from local producers and farmers.

As well as locally grown and sustainably farmed ingredients, Mirazur Beyond Borders culinary experiences will feature a selection of paired wines from Mexico, as well as further afield in California and France, giving gourmands a chance to try out lesser-known labels and producers.

Mirazur Beyond Borders will run from February 9-18th, 2022 at Montage Los Cabos. Experience package, inclusive of two nights at Montage Los Cabos and dinner for two, from $2,500.
