In February 2024, two of the world’s most established, respected chefs – Alain Ducasse and Daniel Humm – will come together for the first time for a very special one-off collaborative dining series, celebrating their signature elevated and modern French styles.
The collaboration will see the pair host four dinners at their acclaimed restaurants. On February 1 and 2, they will be at Ducasse’s Michelin-starred Le Meurice restaurant in Paris, before heading stateside for two nights at the three-Michelin-starred Eleven Madison Park in NYC on February 22-23.
The question on everyone’s lips though, following Humm’s controversial move to shift Eleven Madison Park to an entirely vegan menu in 2021, is ‘Will there be meat?’ The short answer is no: Ducasse and Humm’s collaborative dinner will be entirely plant-based.
The specially created, eight-course menu is designed to showcase the rise of vegan fine dining and share the merits of vegetable-forward cuisine – particularly in France, where meat has become synonymous with haute cuisine.

“Besides being a great plant-based chef, Daniel is, first and foremost, a great chef,” said Alain Ducasse. “To make this completely plant-based haute cuisine, you must be a bit rash and, above all, very brave.”
No stranger to a collaborative dinner, in recent years Ducasse has collaborated with a flurry of other respected chefs, including Wolfgang Puck for a star-studded evening at London’s 45 Park Lane, and Clare Smyth at the annual Festival des Etoilés Monte-Carlo.
“Chef Alain Ducasse was a mentor and idol from the beginning of my career,” added Humm. “Not only was he essential to the creation of modern French cuisine, he is also an innovator and has contributed greatly to the world of plant-forward cooking. I’m so honored to have this opportunity to cook side-by-side with one of my biggest inspirations and one of the world’s greatest chefs.”
The wider teams at Le Meurice and Eleven Madison Park will also be taking a hands-on role in the collaboration in order to reflect the unique style, character and atmosphere of each restaurant.
